The organic stevia leaf we use (in certain products) is grown and processed under strict NOP guidelines, which are reviewed every year to ensure the product’s integrity. Stevia extraction is a process similar to steeping tea leaves, wherein the organic leaf material is gently heated to extract the desired “steviol glycoside” compounds. The liquid left over is then evaporated, leaving only the desired compounds. The FDA actually stipulates that stevia extract used in finished foods and beverages must be a minimum of 95% total steviol glycosides, and ours is 98%+.
